Healthy Low Carbohydrate, No Sugar Banana Bread Muffins

I was looking for a recipe for low carb, low sugar banana bread because it is one of my favourite treats but I was finding hard to find one that was not too complicated. I decided to use a combination of recipes and make my own - they turned out delicious if I say so myself so I decided to add the recipe to my blog in case anyone else wants to try and make them!

Prep Time 10 minutes
Cook Time 30 minutes
Total Time 40 minutes
Servings: 16 - 18 muffins
Ingredients
400g of almond flour
4 very ripe bananas
2 eggs (medium)
200ml of coconut milk (you could use almond or hazelnut)
60ml of olive oil
60ml of honey
1 tbsp of baking powder
Instructions
Preheat the oven to 180 degrees Celsius
Mix the banana, eggs, almond milk, vanilla and oil in a food processor or with a blender.
Add the dry ingredients: the ground almonds and baking powder.
Blend until thoroughly combined
Lastly, stir in the honey - you can add more or less depending on how sweet you want the banana bread muffins to be
Fill into a muffin tin lined with paper cups. If you don't have any to hand, make sure the tin is really well greased. My mix made 16 muffins, but I did "try" the dough quite a few times. Yours might yield more!
Bake at 180 degrees 25-30 minutes or until browned on top. You can also test with a cocktail stick or a knife - if they come out dry, the muffins are done.
